Total bachelor food!

This meal is leading up to the grand finale cook tomorrow.

Here in Oregon we are lucky to have Secret Aardvark. They make some great hot sauces. I used the Drunken Jerk on my wings tonight. It's not for the faint of the heart. It's got a kick. I marinated the wings for 6 hours. I took the marinade and boiled it down to use as a glaze.

Used the 14" WSM with KBB and cherry. Side light method. Left the water pan out for a direct cook.

Cheesy corn is a simple recipe. 4 ears of corn, cut off the cob. 2/3 cups mayo, 8 oz package of mozzarella. You can add any seasonings you want. I went simple and just added chipotle powder.
Mix everything together. Place in an oven proof container. I use cast iron. Place in 400 degree oven until it is bubbly slightly brown and gooey! Serve with chips or bread.

NOW THAT is a different way to make Corn. Never seen anything like that before. Kind of a twist on Mex Street Corn. Impressive Sir...JJ

Looks great, but I'm not a jerk fan. Corn sounds interesting, ever try other cheeses in it?
