Ok, so I did my first come lets stick burn ever. I have a few cooks in the bag with this thing so now it was time to see how it would burn some wood. Been wanting to do this for a while but never could with the WSM.
So for tonight's menu, spatched chicken! My smoker runs hotter than I'm used to so chicken seemed the logical choice. If temps got away from me, no big deal just bring them down. I went for a small hot fire and shot for 325-350. Kept a watchful eye on what was coming out of the "chimney." Only once did I get a little bit of white smoke but I poke the fire and it shot back up and the smoke turned back to blue.
Good smoke and the bird is rubbed and ready.
Pre heating splits on the firebox so that they burn nice and clean.
About an hour in.
And we're done! Plated with some green beans and a little bit of white sauce. A little darker than I'm used to but waaaayyyyy better smoke. Next up, I got do some ribs!
