Keep in mind this is not a new smoker, or at least that's the story...
So tomorrow it's going to be break in day. It's going to have to be a short cook as I have an appointment at 4.
I found a nice Choice Chick Cross rib roast that gets to be the tester. I think I will also whip up a batch of JJ's Au Jus. Find some good rolls oh yeah! French dip it is!
Said roast is swimming in Henderson's Relish. I will SPOG it tomorrow right before going on the smoker. I plan on KBB, cherry and a pit temp of 200-225.
