Hello, my name is Eric and I am from Ventura, CA, USA. I have just picked up a 40" electric smoker. I have smoked on it three times just to start figuring thing out. My times have really been off as my first smoke didn't finish until 2:00am on a pork butt. I have since done tri tip, beer butt chicken and baby back ribs that have all turned out excellent. I have found a ton of useful information on this site so I figured I should signup and chime in. Thanks for all the advice.
