Bacon Wrapped Pork Stuffed Pork?

Bacon bombs, mini-fatties, stuffed pork chops, call 'em what you want. I'll let the pics explain.

Taking advantage of this beauty day, decided to prep outside at the pit.


Started with two thick cut boneless pork loin chops, some leftover PP from the freezer with ChefJJ's finishing sauce mixed in, some homemade BBQ sauce (BBQ Pit Boys Sailor Jerry Sauce from my last ribs) and Jeff's rub


Butterflied chops and pounded flat, even punched 'em with the needle tenderizer.


Jeff's Rub both sides


Sailor Jerry's BBQ Sauce one side


Pulled pork on top of that



Rolled up


Bacon wrapped and dusted with more Jeff's Rub


Into the kettle with some hickory @ 225*

Wow,they look amazing!! And those were some lean pork chops, so obviously this is a healthy dish!
