I tried a few new techniques with this butt. I used my normal rub and then wrapped in plastic wrap and let it sit in the fridge for 24 hours, something I have never tried before but will do from now on. An hour before the smoke, I took it out of the fridge and got my smoker ready. About 11pm Sunday night. 10 minutes before I put it on the smoke I injected the major muscles with a mixture of apple cider and some rub seasoning. Again this was something I had never done to my butts, but it turned the juciest and most flavorful PP I have ever had. It was a Nice surprise to get some of that rub flavor deep down in the butt. I wanted to get pictures of the money muscle and tubes, but by the time I pulled the rest of the butt they had all been smacked up by my in laws. Next time. All in all a really successful 16 hour smoke. Pulled it off when IT was 205.
