Hello everyone. Been practicing culinary arts for 4 years. Being more on the lower end of middle class for years I've had to build my own necessities and have gotten used to diy-ing alot. Always have been a gigantic fanatic of smoked brisket. Pair those two together and that created a desire to build my own smoker. I originally thought of digging a huge pit as a smoking chamber and feeding it a la Dakota fire pit (with an offset pit connected to the chamber, which would be the firebox). Never got around to it as I live in texas and digging pits is annoying as you gotta get past hard clay. Then I wondered if I could build one out of concrete or maybe firebrick and I began my research. Sure enough Google meant for us to meat, and after lurking here all week, here I find myself, joining you all fine gentlemen.
Bout to start my journey into knowledge and into finally getting around to smoking my own brisket!! Already learned alot in this past week and mentally drooled all over your posts.
Ive always though if I was cursed to forever eat the same meal for the rest of my life I'd choose brisket, and it would be a blessing, not a curse haha.
