Photos... Not sure if the will upload or not...

Baby back ribs from Costco. My own rub... Membrane left on for the first trial.

Sounds like a good start.

 

Are you sure the membrane was on the ribs.

 

I think most of the BB's from Costco have the membrane already removed.

That's great, I think your going to notice the ribs will be much juicier.

 

The membrane holds the juices in the ribs.

 

You can actually see the juice pooling under the membrane.

So...perfectly cooked but I used too much wood and they over smoked. Pull clean off the rib, just how I like them.

Fought with temperatures, too low...which is weird from what I've read so far here. I did block the vents in the smoke tray. I found that the tray/pan was right on top of the burner, starving the flame. Beer cap under one of the legs and voila, heat! Too much though, went up to 300F on lowest setting. I'll have to remedy.

I think I'm going to pull the brown sugar on the next rub. It caramelized too much and turned out almost blackened.

Rub- 5tbs brown sugar, 3tbs garlic, 2tbs paprika, 2tbs onion powder, 1tbs salt, 1tbs fresh ground 4 peppercorn pepper, cayenne pepper to taste, about 1tsp or so.

I'm going to pull the sugar and add more cayenne next time and maybe add thyme.
