Nice. I always buy full Racks and cut St Louis style. I save up the Tips and make my Char Siu...JJ

Me too, but I bought these tips. Seen them at Sams Club pretty cheap.

Yea. If I cooked at a lower temp the fat might melt out better. I ran it around 400.
