Greetings all,
For starters, allow me to introduce myself: my name is Sean and I live in Anchorage, Alaska. I am new to smoking, but have been trolling this page for months.
First, I was trying to choose which smoker to buy, then what smoker to build, most recently, what recipes to try.
I figured it was time to say hi.
First of all, I opted to build a vertical smoker, the TARDIS, with a propane heat source and a big kahuna smoke generator.
My first project was a side of bacon, (regular, savory and maple.)
The next project was to finish off some beef jerkey in my smoker.
Today, (Super Bowl Sunday), I fed friends and family with a twice cooked ham.


I am infinitely thankful and beholden to this community for my progress so far and I look forward to more smoke filled days to come.

Hey Sean,  welcome to the site.  That's a pretty smoker you've got there.  How do you like the Big Kahuna?  I studied those some myself but haven't pulled the trigger yet.

I really like a double smoked ham.
 
So far the Big Kahuna is treating me right. I'm starting to mix larger and smaller wood pieces in attempt to make less smoke, but ham bacon and jerky all have come out great. I really like not having to reload the smoker so frequently and the ability to cold smoke. I'll be smoking 30 pounds of bacon next week.

I have a Big Kahuna and love it for the versatility of wood types, lump, pellet, chips etc. but I also have the dust and pellet version from Todd and use them all depending on my needs. as Case said how about some details on the smoker build?
