okay so i found half my answer and that is zinc and galvanized plating is a health hazard. that said how do you find bolts and washers that aren't either. Everything seems to have it.

I use stainless steel bolts. 

Not sure how critical it would be for just a few little mini-bolts.  Just out of caution I guess?

I've read other people on here talk about burning off the zinc with torches or in a fire before using in the smoker. I've used the stainless steel.
 
Use stainless, even a small amount of zinc off gassing can be bad. If you local big box store does not have stainless try a local bolt supplier or an automotive store.
