Since this is a mixture of meat styles , I posted it here....

I smoked a corned beef on Sunday to make a pastrami, and tonight, we made sammichs!

The marbled rye was homemade, the Thousand Island dressing was homemade, the Swiss cheese and kraut were store bought


These were good, but the wife asked about sausage and kraut. She had heard me and the guys talking about it over the weekend, and she was curious, so I made some!


She liked it a LOT!

For the record, avoid my office tomorrow!

Thanks guys!  I brought a sandwich for lunch and I've already eaten it!  Guess I'll be going out later for something.

I'll post the recipes for the bread and dressing when I get home later.  Both are easy to do.
 
Homemade Rye too !!!   What a fantastic looking meal,  The house next to you is not for sale is it ??    Great job

Here's the recipe for the rye bread and the thousand island dressing.

The rye bread recipe is a combination of about 3 that we've made before.  We think this one makes the best marbled loaves.

Rye Bread

This recipe will have to be made TWICE for marbled rye bread.  Read below.

Ingredients
  • 1 – package of dry yeast (don’t use cake yeast)
  • 1 – Tbs sugar
  • 3 – Tbs butter melted
  • 1 – egg slightly beaten
  • 1 – cup warm milk
  • 1.5 – tsp salt
  • 1 – cup rye flour
  • 2.5 cups all purpose flour
  • 1 – Tbs caraway seeds toasted
  • 1 – tsp vegetable oil
  • 1 – egg beaten well (egg wash before baking)
  • 3 – Tbs unsweet cocoa powder (only for second batch, not first)
Process

Add yeast, sugar, melted butter, ONE egg, and milk to your stand mixer with a dough hook.  Mix on low for about a minute, then add the salt, rye flour, white flour, and caraway seeds (now add cocoa for 2[sup]nd[/sup] batch).  Continue to mix until the flour is no longer dry.  Then mix at a medium speed until the dough makes a ball and tries to come out of the mixer bowl.

Make the dough into a smooth ball with your hands and then put it into a lightly oiled bowl, cover with saran wrap, and let it rest for about an hour.  The dough should double in size.

IF you are making marbled rye bread, you need to make the second batch NOW, ASAP, just like above, but add the cocoa powder.

After the dough ball(s) has risen, place them on a lightly floured surface and knead a little bit.  If making the marbled rye, you will need to roll each ball out flat (1/4” or so) and cut each into 4 equal pieces.  Then stack them up alternating white rye, brown rye, etc, until all are stacked up.  Press them together firmly and pinch the edge close to you and roll the layers all together into a tight roll.

The first layer laid down will determine the color of the exterior of the loaf.

Divide the roll in half, form each half into a log shape and make sure any noticeable seams are closed.  Then place each roll into its own greased and lightly floured bread pan (5.5” x 9”).  Cover with saran wrap and allow to rise for around an hour.

Brush the top of the loaf with the well beaten egg, then place into a preheated 350 degree oven and bake until the top is lightly browned, about 45 minutes or so.  Once cooked, remove from the oven and let it cool on a rack.

Thousand Island dressing (Not my recipe, sent to me by a friend)

  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 2 tablespoons sweet pickle relish
  • 2 teaspoons finely diced onion (I use red onion but yellow or white would work just fine)
  • 1/4 teaspoon finely minced garlic (about half of a small clove)
  • 1 teaspoon white vinegar
  • 1/8 teaspoon kosher salt plus more to taste
  • 2-3 dashes Tabasco sauce (optional)
Mix all of the above together and enjoy!
