smoked meatloaf with mac & cheese, REALLY? 
 
Sorry to revive an older thread, but this has given me a great idea for dinner.   Just one question though, how long did the meatloaf have to stay in the smoker?  If I cut the temp down to 250, what might be the approx cooking time?  They both look really, really good and I have a free day on Wed, I hope,.

I just smoked my first meatloaf over the weekend.  It tasted GREAT and was close to this recipe...but there was a very pronounced red/pink ring around the outside edge...hoping to confirm if that was a smoke ring or if it was somehow not done completely??  Any thoughts?

Your meatloaf cooked from the outside in,  ( The center was done last), and so you can rest assured that the pink outer layer was smoke ring.

That is exactly what I was hoping to hear and what I thought had happened, but I have never seen SUCH a pronounced pink like that before.  Thank you much for the answer!  Happy Smoking!!
