Hey guys! Got turned on to this site in Joe's hey smokers thread on archerytalk (smokin x's)

Just a little intro, I'm from south central PA(born and raised). I'm a big archery hunter but I love mushroom hunting almost as much. I do enjoy trout, bass, carp and catfishing. I'm fairly new into smoking but not new to cooking by any means. I've worked with food for almost 15 years in multiple restaurants, and for a couple caterers. I tend to pick up a lot of hobbies: I've made knives, I build bowstrings, tune bows, hike the AT quite often, do a little woodwork, lots of stuff with paracord, and tied my own flies.

This past spring I purchased a chargriller and a side fire box for it, since then I've done a few mods to it but still have a few to do.

It's not an ideal smoker, and it's a chore on long runs babysitting the fire but I enjoy it. I've got probably 25 or so runs under my belt and with each one I tune my tactics a little more.

It's a ton of fun tuning into the thread on Archeytalk, and I can't wait to hear and learn more on here!

I'm looking forward to learning as much as I can. I know before long I'm going to be adding something else to my smoker arsenal, this offset is great for big cuts and long runs but doing smaller stuff and low temp stuff is a pain!

I've been lurking and trying to pick up what I can on snack sticks and SS as that's my next mission. I can nail a butt and can turn out pretty good chicken but jerky, sausages, and cheeses are a whole different world to me.
