Paul from SWLowerMI. Had been using an electric smoker up until recently, mainly for brisket, ribs, pork butt, and an occasional pastrami (repurposed corned beef). No fish or poultry as yet, nor any cold smoking. Have tried using my old gas Weber in a smoker configuration with little success. Great forum!
