2nd question. Everyone says that you have to replace chips at least ever hour. I have lots of smoke when using chips soaked for 30 min. This is at 6 Hours and i havent reloaded chips yet.
David, Yes you have a MES 30 inch smoker. The smoker you have is a analog smoker your controls are on he bottom left of the box. The MES 30 that are normally talked about on the forum are digital..
The analog units are used by a lot of folks.
To be honest I have never used a analog unit. with that said I would put the drip pan on the bottom shelf.
As far as the smoke, you are hearing people talk about the digital that Burns chips in 20 minutes.
Having never used your type of smoker I cannot tell if you have good smoke or bad smoke. There is a difference. Use the search bar for discussions on that. Jted
