Best wY to transport smoked turkey

If I'm smoking a pork butt or ribs that will be eaten elsewhere, I just wrap them in foil, put them in the cooler and take off. What do you do with a turkey? I've never smoked a turkey or chicken that I didn't eat shortly after. Seems wrapping them in foil for a while would cause the skin to get soggy, but I may be way off. I'll be hauling this one an hour and a half away.

What do y'all do in a situation like this?

I'm not a crispy skin kinda person, but I would consider an old paper grocery bag and leave the end open. Basically you're just wanting to keep it clean and breathable. If you are too worried about critters set it elevated in a ice chest or pan full of ice with the top off/open.

 

Seems a best idea to me.  <shrugs>  If its an hour and change, I probably would only bag it depending upon how long its been cooling.

Yep, the skin suffers, but wrapping the bird in foil, wrapping it in a blanket, and putting it into an empty ice chest works well. I'll be doing this to a large bird on Wednesday night so my MIL can pick it up Thursday morning. It'll still be warm enough to eat when she gets it.

But, like you mentioned, the skin will be wet and rubbery, luckily my inlaws are non-skin people. biggrin.gif

If it was placed back in the oven for a bit once I get it there, would the skin crisp back up? Or does that run the risk of over cooking or some other problem?
