Hi my name is Sue and my husband and I travel around in a caravan throughout Australia.
We have a portable wood chip smoker and the few times we have used it it hasn,t been very successful. We would like to learn how to smoke effectively for those times when we have surplus of freshly caught fish, mudcrabs etc etc.
Plus we love the flavour of smoked food.
Looking forward to learning and becoming effective smokers.

Sue and Hubby, welcome to SMF!  Glad you are here and looking for tips.  If you could provide a little more detail about your smoker (manufacturer, model, etc) that would be helpful.  Also, what made your attempts less than successful, taste-wise I'm assuming.  You'll be an expert in no time because the friendly folks around here know what they are doing.

Hi,Sue! It's great to have both of you here! There's so much information here it's possible to go into info overload. It doesn't matter whether you have a rig that you need a trailer for or a little patio unit (or a portable smoker, which I'll admit I'm curious about, as well as the caravan thing), everyone is just enthused about the "hobby" and always interested in sharing their experience or hearing about others'.

Welcome, Sue.  I thought Aussies just used "barbies" and not smokers! LOL! Am glad to see that y'all want to learn to smoke some various meats. It's a treat!
