I know you cant tell from the pic, but this turned out super tender, probably the best Ive done. It was only a 4lb butt but took 14 hours to reach 200 degrees, I was smoking at 225. It came apart very easily, but I like to shred then chop it up.
I will try again this coming weekend on a 5 or 6lb butt @ 225. Hopefully it wont take as long!
Any suggestions on healthy sides?
