Hello! New smoker joining the group. :) I have officially found my new addiction. Not sure how to rank my skill level, I've got experience frying medium to large birds, grilling, and open campfire cooking. I'm a relative newbie to smoking but I have successfully made it from chicken pieces through a whole brisket with great results.I'm looking for tips on different flavors and methods to try to find the elusive perfect smoked meats. :)
I'm from a bit south of Dallas, Tx. I've enjoyed cooking outdoors for some time, but in the past few months acquired a smoker and I'm pretty sure that if I have surgery anytime soon they'll find a smoke ring. ;)
