There are lots of great recipes here for hot chicken and for sweat chicken. But if you're looking for something different, try the Herbal rub.
1 teaspoon dried Sage
1 teaspoon dried Rosemary
1 teaspoon dried Thyme
1 teaspoon dried Oregano
1 teaspoon ground Ginger
3 teaspoons Paprika
3 teaspoons Salt
2 teaspoons Pepper
2 tablespoons Olive Oil
2 teaspoons Soy Sauce
2 big dollops fresh minced Onion,/Garlic
(I call this my Starter and use if for everything. I always have a container of it in the fridge. 2 medium onions and 1 bulb of garlic, chopped fine in the food processor)
1/3+ cups of Red Wine
Bring to a boil while stirring constantly. Reduce heat and simmer, stirring occasionally, until mixture reduces to a saucy/pasty consistency. If doing chicken pieces, place them into large plastic bag and add sauce. Refrigerate overnight, or as long as possible.
This recipe is enough for about 10 chicken legs or thighs. Or one whole bird.
This also works great on lamb.
