Been googling but can't find the name of the type used. It's probably got a specific use other than a BBQ which would lead me to it but I ain't sure :)
By mesh, are you talking about the material you'll use to make the grates? Many people use expanded metal:

You'll be good with Stainless , but a good 3/8th in. expanded metal with an angle iron border for strength (1/2in.) is cheaper an after curing , will beat any weather .
