Had a lot of fun smoking three slabs yesterday on my WSM 18 incher. I learned a lot and was faced with new challenges but overall I thoroughly enjoyed the experience and can't wait to do it again. Unfortunately it was raining pretty hard here in Los Angels yesterday and I was faced some pretty challenging situations. Everyone loved them. I hope you enjoy my pics.

 


Here they are getting some rub love. I bought the ribs at Costco. After rubbing them I put them in the fridge overnight.  

 


Made a simple dry rub consisting of brown sugar, pepper, paprika, chili powder, garlic powder and onion powder. I salted the ribs right before smoking them.

The finished product. I'm not a big fan of putting sauce on my ribs but a lot of people asked for sauce so I made some. 

 

Tried these for the first time. They worked really well. They burn really clean and are odorless and produce no smoke.  Not sure if I'll stop using newspaper but it was good to try them. 

 


This is when I put them on. I cooked them for about 5 hours. Three hours on the grill, two hours wrapped in foil and about a half an hour back on the grill while spraying apple juice on them. 

 


And here they are!  I'm still not entirely happy with how they came out but everyone liked them because they were gone quickly!!  There are some things I need to tweak and experiment with next time I make them again.

Thanks man. The sauce came out very good. I would describe the flavor as very tangy with just the right amount of sweetness and spiciness. Gonna use it with the pork butt I'll be making this weekend.

How long has California been in a drought?  The day you smoke ribs Los Angeles gets heavy rain!  Just means you need to grill more, for the good of your state.  Nice pictures and write up!  points1.png
