So busy this weekend had two smokers going at on time this is my first meatloaf and it turned out great only took about 2 - 2 1/2hrs I did not have my maverick in the whole time,,, so I could not tell temp of the smoker I know my MES is about 20* high so this was cooking about about 250 I checked it with my therma pen - Dang it I love that thing.
4lbs 80/20 ground beef
1 cup or so of Bread crumbs
salt and pepper to your likings
a good shot or two of BBQ sauce
4lbs of 80/20 ground beef now since my freezer is full
Had some left over bacon ends I had to use up
In smoker with cherry Pellets - finally got maverick in since other smoker is done.
Turned out perfect!!!!
This will be great for left over Meatloaf sandwiches
