Hope everyone is having a great Memorial Day - went to the WD this morning and they had whole chickens on sale for $1 a pound so I figured today's as good as any for a bird. $5.81 later and a little prep time making my homemade jerk I'm about to throw it on.
My pepper plants are starting to produce like crazy and I don't want them to go to waste. Looks like a jerk filled summer for me! I had one scotch bonnet finish getting ripe last night so it's perfect! The flavor is amazing on these peppers. I mixed in one of the red habaneros and man this marinade has the best heat and flavor I've ever had. Here's where I'm at so far:






Couple foil pouches of pimento wood on and temps rising quick. Soon as I hit 275 I'll throw on the bird!

Absolutely! Hope you like it as much as I do:

This is the basic recipe. The limes on the bottom are squeezed. Just the juice. I also add a tsp of white pepper too. Put it all in a blender and blend till "smoothish". Looks nasty but smells and tastes fantastic. 2nd pic is leftover from this batch. Goes great on pork, fish and eggs in the morning too! Let me know what you think!

Willie - I actually planted seeds in November for the habs and the scotch bonnets. Had to bring them in a few times over the winter but they're doing pretty good!


Rarebit - had to fire up the kettle so it felt some love!

I've never had any luck growing peppers. I bought two Hawaiian chili pepper plants and a scorpion pepper a few days ago; hopefully they won't die...
 
Thanks for the points! Kid actually came back for about 5 helpings. Whenever dad puts something on the grill she eats it up!
