My first rib smoke with St. Louis style ribs, I've always done baby backs in the past. Doing two racks unfoiled until done (bend test @ 180F?) @250F over hickory in the WSM.

Using a different rub on both racks: Rack 1 will have Jeff's Rub and Rack 2 will have a 50/50 mix of tubinado sugar and Tatonka Dust.

Lookin great Duke, the bend test is good... Ya can also do the toothpick test on ribs ! I've never went by IT on ribs personally, but that's just me ! Be lookin for the final, tasty lookin plated shot ! Thumbs Up

Did both the toothpick and the bend test at 4 hours and everything seemed good to me, so it was time to eat. Pit temp rose to 290F a couple times during the smoke, but I just left it alone.

Anyways, I am now a no-foil rib guy from now on. These were the best ever!!

Great bark on both and very moist. Tatonka Dust on one rack was a nice change of pace, I wouldn't say if I preferred one or the other, they were both awesome!
