Pulled My Pork on the Akorn

9 lb plus pork piknik shoulder injected with apple juice and apple cider vinegar  

 

 

Rubbed

 

 

On the Akorn @ 250°F

 

 

Smoked to 160°F  ... foiled continued on to 190°F internal temp

 

 

3-1/2 lbs all said and done. Rested an hour unfoiled.  Pulled fine. Next time 200°F, unfoil an hour, rest an hour then pull. Crisper bark that way perhaps although was not to bad as was.

It looks good. But as you said go to 200°-205° next time for pulled. I'm not a foil guy but you can if you want. I like the bark better without foil.

Pulled fine.  Wouldn't have cooked any less. Opened the foil at 190 F and crisped the bark back up but the internal temp didn't want to move anymore so next time will go at least 200 F, unfoil, crisp, rest and pull!
