Was not real sure if I should start it before going to bed or get up early. Choose before bed. Drum was puffing nasty smoke for quite awhile. Once it settled I put the five and a half pounder on it.
 
Almost there. Zeroed the min/max when I put the meat on. Low was 177, probably from the meat being cold when I put it on. High was 268. Filled the basket with Mesquite chunk charcoal. Grabbed a few chunks out of all the "flavored" bags. I also put a bark peeled cherry split stood up in the center of the basket.
 
Was not planning on it being done this early, how long can I safely let it rest double wrapped in the cooler full of towels?
 
I'd like to say "I told you so", but you didn't give anyone a chance to.

No 5.5 pounder needs to be done over night.

I've heard you can keep them a long time, wrapped in foil & towels in a cooler, but it's pretty small to generate that much heat.

How about pulling it & then reheating it before the meal???

I've rested for round four hours personally, I've heard others say they've went a little longer. That's a great option Bear give ya, they heat up real nice... I just toss mine in the crock pot with a little Apple juice !

I agree with Bear reheat it. I always make bigger butts they freeze well and leftovers are great. Sorry it's done to early for you did you get a pic?
 
It will hold for a long time or as Bear said reheat later. I

Now I do not see a butt so I'm not sure you smoked one.

Last couple of butts I did stalled for close to 3 hours, was afraid that was going to happen again. Last butt we did we ended up eating at 8 p.m. [emoji]128556[/emoji]
 
As far as the apple juice, I just keep enough in the crock pot to keep the PP moist ! Works great for me !

The first butt I did started around 6am we ate about 9 my parents were over for dinner and they almost left before it was done.:biggrin: do you keep a record of your smokes?
 
That was one mighty tasty butt. The bark was a lot less chewy than when we used the BGE or the MES. Both of us liked it better after it sat in the crock pot with apple juice...Thanks for the tip...
