Hey y'all,

I'm Travis from VA. Over the last couple of years, I've spent a lot of time in central Texas. Wouldn't you know it, now I want to try smoking brisket (and ribs. and everything.) on the East Coast. It's time to purchase an offset smoker. Or, have one fabricated? Everyone here says buy one size up.  I understand the reasoning. Insulated firebox looks like a good addition.  And 24" diameter will fit two briskets side-by-side, check.  By that point, might as well put wheels under it, right?  This "hobby" is like cars or boats, isn't it?  (never-ending upgrades)

I've been reading here for a few weeks.  It was time to say hello.  Looking forward to participating.

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing

because their are so many different ways to make great Q...
