I got the urge to have steak today (thanks to Justin's tenderloin thread). Just happened to have 2 nice ribeyes for this occasion.
As this was a bit of a spur of the moment meal, I didn't think much about shooting qview until they were already on the grill. These got marinated for a couple hours in Daddy Hinkles steak marinade, then dusted with a touch of Big Poppas Double Secret Steak Rub right before they went in the Rec Tec.
- Pull the grease shield out the the Rec Tec, lay some foil down in the bottom of the barrel to catch any grease drippings.
- Replace the right side stainless grate with the searing grates (GrillGrates).
- Preheat the RT to 500*.
- In go the steaks! 4 minute sear, then rotate a half turn for 4 more minutes (to get those pretty restaurant style sear marks).
- Flip steaks and sear for 5 minutes on 2nd side.
These shots I took when I opened the grill to flip the steaks to side B.
There are some who believe you can't get good sear marks using a pellet grill...

Best steak I've had in a while! Like my Granddad used to say, so good it'll make your tongue slap your brain! Melt-in-your-mouth tender, juicy and very flavorful!
