Kiawe is from the Hawaiian Islands, well and some other Pacific islands too. Used when making Huli Huli chicken. It's has a nice mild flavor that goes great with chicken, beef, pork, cheese, yeah everything! It also mixes well with cherry wood.
No salmon fishing yet the season opens end of May. Currently fishing for bottom fish. Sea bass, Lingcod, etc.
