I didn't do nothing fancy or anything over the weekend, I did however do a nice grilled chicken salad.
I just added salt and pepper and some roasted garlic and herbs.
I pulled the chicken at 165° and let it rest for about 10 minutes while I made the salad part up.
(Used Apple Wood Chunks while Grilling)
The salad is nothing more then romaine lettuce, some shredded carrots, sliced baby bella mushrooms, cherry tomatoes, and topped off with some Italian cheese.
The chicken was so moist and tender, it really went well with the salad.
