I'm going to smoke my first butt tomorrow and was wondering about freezing the left overs?
Is it better to freeze the meat without sauce or with?
When I freeze PP, I just vac seal and freeze with nothing in it. PP has enough fat content that it won't dry out when reheated in simmering water. This way I don't lock myself into a sauce and I can decide what I want when I defrost some.
I always forget some pics. I get too excited when it is time to eat.
If you have leftovers in the future, I catch the drippings from my PP then add a little to each package before freezing.
