Smoked Pickled Herring

                                          Smoked Pickled Herring

 

 

 

1 - Mise en place

 

 

 2 - Draining pickling solution

 

 

 3 - Herring on rack

 

 

 4 - White alder smoke being applied to herring, let set for 10 .- 15 minutes.

 

 

5 - Smoking pickling solution, pale blue smoke, 3 minutes.

 

 

 6 - Refrigerate for two days during osmosis, then enjoy.

Not a clue what that would taste like but Id try it thats for sure. Never done any pickling or canning before. Adding it to the back of my "someday I'll try that" list.

Nice! I like pickled herring, just wish I could find the brand I used to get growing up in the Midwest. This may make the stuff here more palatable.

Morning Tom......   Pickled herring is one of my favorites......  right next to pickled sockeye...  pickled tongue... asparagus....

 

I've got to figure out how to do that.....      ????  Maybe with an aquarium air pump ??...

Good morning Dave,  Had to make a run into Spokane yesterday,  wouldn't you know when I was emptying the car, I found two jars of herring and 15 pounds of cheese.  th_dunno-1[1].gif

 

Seriously consider a Smoking Gun.  What can be done with one of them is unbelievable.  I was a little apprehensive when I first got one, but have sense found it to be an invaluable part of my smoking arsenal and one of my best smoking investments.  

 

Rain and warm weather here has brought my ice fishing to an end before it got started.

Oh my ... This is right up my alley!!

Our local herring run is about to start any day now. I already have the ingredients to pickle some, but now it looks like I need to get my hands on a smoking gun ASAP.

If I had access to herring it would cost me another refrigerator for sure. There are a couple handhelds out there, one for ± $45 another for ± $90.The less expensive one looks like it would do the job just as well as the more expensive one. When I purchased mine there was only the more expensive one, of course. It has proven to be a very valuable accessory in the kitchen.as smoke flavor can be applied to anything.
