I used to have a side box probably 20" that I purchased off the side of the road from a welder around 1983. Put mesquite and pecan in it. I lived in an apartment about 20 feet from the pool. When I would come home from work at midnight I would put a couple of logs on and throw a brisket, ribs and couple of chickens on it with rub only and just leave it unattended until the next morning when I would go see if there was any fire damage or catastrophe. It always came out "perfect" and around 10:00 A.M. the next day there were always about 25 people at the pool just staring at me. The smoke drew them in for blocks. Made for wonderful summers until I moved and gave the pit to a neighbor. I have missed it ever since! I will get one this Christmas and get busy with smoking again and the LANG looks nice but may bee to much for hobby cooking. Your articles, feedback, suggestions and recipes are excellent and I found a lot of great information on this Forum. Thank you all... If anyone has a good recipe for salmon let me know, I have only seen successful recipes with electric smokers.
