safeway had a bunch of beef short rib packages that had <1" meat on the bones that I skipped, but then I randomly found this package that had about 3" above the bone. Three bones, 3.0lb, not cheap at $5.99/lb. but I've never seen such huge chunks. Turns out the third one was at least half fat and I may end up throwing it into a chili, but the two big ones should be fun. SPOG, ECB with Ventech to maintain 225F, hickory/apple chunks.I plan on 2-2-1. Compound butter and bbq sauce under the foil.
