I will be trying all the recipes but went with a Hi Mountain Kit just to get a feel for this stuff as this is the very first attempt at these...*****************


Hey all, trying my luck at the first attempt at snackin sticks ! Since this is my first attempt I done a Hi Mountain kit to get my feet wet on this sausage makin thing.... My first impression of makin these snackin sticks is what a kick in the pants ! I really enjoyed makin these with my kiddos and I'am thinking it'll get quicker as we learn..... So here's the first attempt getting underway with my helpers.... Thanks for lookin all !

One question for all you snackin stick pros out there.... I need an IT of 165*.... What's the best way to measure it on these sticks ? I don't wanna overcook them ! Thanks for any input !

Your stuffing skills are impressive…..my first few runs of sausage didn't look nearly as good as yours!

You've also got some very cute little helpers!  Looks like everyone is having a great time.  I'm looking forward to hearing how everything turns out for you tomorrow.

Hey Clarissa, thanks so much for the kind words.... Those stuffing pics posted are the ones of me not cussing.... :biggrin: It took me a few to figure out the right pressure between the casing & the stuffer ! All in all the first attempt was a success, of coarse there's a few things I would do different.... LOL. Thanks so much for dropping a line ! Thanks for your pointers as well !

My kids are always my helpers when it comes to TBS...... Thanks so much for the compliment !

Pulled them out this morning for an hour before putting in the smoker ! They sure smell good.... My helpers wanted to taste test em ! I said not quite yet.... LOL.

I smoke mine to 153° I use an instant read when I start getting close.

looking really good my smoking friend... as David said.. 153ish IT ... starting out slow (120`) and work your way up to 170ish cooking temp... good luck and will be waiting to here the results.. .
