Good morning . Today I will be smoking a small pork loin and a small brisket in the MES 40 with the AMNPS. I preheated the MES to 250°. put the meat in then got the AMNPS going. For today's smoke I am using oak pellets.
Here I am applying the rub.
Let it sit for a few. The rub is starting to start taking on that nice
color. I don't use anything for a binder. This is the result of the
salt drawing out the moisture in the meat
