Mule's smoked loin and brisket in the MES 40 with AMNPS. Qview

Good morningmoon.gif sorry.gif . Today I will be smoking a small pork loin and a small brisket in the MES 40 with the AMNPS:grilling_smilie:. I preheated the MES to 250°. put the meat in then got the AMNPS going. For today's smoke I am using oak pellets.

Here I am applying the rub.

Let it sit for a few44.gif. The rub is starting to start taking on that nice

color. I don't use anything for a binder:no_no:. This is the result of the 

salt drawing out the moisture in the meat

Here is a pic after 1:45 min. I probed the loin and it is 128°. I will probably take it to 150° IT. If it was for me I would not go that high. However it is going to older "do you call that done" people.

Here it is at 144° I just couldn't bring myself to going to 150°. I foiled it for a rest.

I removed it from the smoker, Wrapped it in foil for an hour, then

into the fridge to cool, then sliced.

Here are the final shoot's of the loin.

Vacuum sealed in the VacMaster and ready to travel.

But it sure smelt good and sliced like butter. Some day I will look back
