How do folks suggest re charging a fire box during a smoke?

I use royal oak and I would prefer to just dump fresh lump on the already burning fire, however it seems like the initial smoke from the fresh lump is nasty thick smoke and I would not want my meat exposed to that.

So does that initial thick smoke from fresh lump affect the meat at all and it is it acceptable to recharge this way? Or should I just get the lump burning in the starter first and then dump?
 
It is a bar b chef side box.


I usually start with 1/4 of a bag in the box, get it going good, then shut all doors and open side vent 25% open. This will hold 225 to 240 for about 2 hours. Then I need to add another load, I have been doing1 full starter, this last another 1.5 hours or so.

I read about people just adding new lump to the box every hour or so and just letting it start in the box instead if in the starter. I would prefer this as sometimes I am not as good on my timing as I need to be and have temperature swings.
 
Zack , hello. You have a firebasket and it's supposed to be above your FB floor ,so use something to shake the basket a bit to clear some of the dust , then load in the fuel in and continue cooking . You should have some embers left in the basket to set-off the fresh and if it is going well , leave the door open for a bit until it starts to blaze , then shut the door and continue. You should have minimal or no off colored smoke .

The ashes you shook out can be caught on a piece of metal in the bottom of the FB , just pull it out and dump the dust in an ashcan.

That smoker looks like C.O.S which in smoker circles is a cheap offset smoker.  COS's  don't make very efficient cookers and require lots of mods to work "better"   Do you have access to wood splits?   They just don't make good charcoal smokers.  If i did use charcoal in it i'd get a  charcoal basket with a maize and use the minion method.   

If I were you i'd seriously think about upgrading to something like a UDS which will be pretty much set it and forget it and be way way way more efficient.   Look at the drum kits from Big Poppa Smokers.
