Looks awesome!!!

When I was running the Italian restaurant at work I use to make bone in short ribs ''osso bucco' style as a special. Man was that good!

I think yours look better...

Yeah, we used to get those cuts a lot cheaper down here. Demographics have changed. More people who know how to make them tasty. Demand drives price.

Now the prices are way up there.

We still enjoy them when we spot a good sale.

That was running thru my head immediately as "who loves short ribs?" And I do love short ribs !

I love ribs braised and osso bucco style is great but I am afraid I will be doing them this way from now on. Thanks for the encouragement.

glad i found your thread......
a friend just dropped over to Terrace from the Peace country and brought me some brisket and short ribs. the brisket is already in the brine for pastrami and i vac packed the short ribs. DEFINITELY gonna do them up A LA DISCO in the next few weeks !!!!

brisket and short ribs are more expensive than T-bones when they go on sale !!!!!!
brisket and short ribs NEVER go on sale up here im my little hovel where i live .. one saving grace is the butcher down the road that does all the custom cut beef and pork for the locals is gonna save me short ribs and brisket, says it just burger anyways ... BA HA HA HA

its not a butcher shop as such. he cuts moose, and home grown beef and hogs. actually the Save - On meat manager and does this for extra cash. whats nice is he is 1/4 mile up the road from me. said he cut 40 hogs last year and i can do all the bacon and hams ... LOL

told him im retired and no looking for a job, i have a fridge to brine and a freezer build smoker ... BUT THANKS...

Smoked short ribs in my mini WSM for four hours last weekend
They were delishous but I found them greasy.. Maybe I will try them again

There is a lot of fat on short ribs. If you don't braise or smoke them long enough, there would be larger pieces of fat. Try the 3-2-1 method. It worked great for mine.

WELL .....

gonna start marinating my shorties and i also have some moose short ribs to do along with them. they can use the extra fat the beef will offer up !!!
