That's a pretty bird. I like rosemary chicken, I have even been known to break off some sprigs and throw in the coals.

Now that is a good idea! I may have to try it next time. Can you taste the rosemary smoke pretty good?

Not too well if you like a heavily smoked bird. I did this when smoking for my Mom and she couldn't eat heavy or harsh smoke. The Rosemary is faint, but there but you can't use hickory or mesquite you have to be doing a lite smoke, and have good taste buds and budettes.

You can't lose anything try it and see what you think with your next bird.

Hickory is a heavy smoke so if you want to taste it, go very very light with the hickory smoke.

Makes sense. Ill just pass on the hickory when i try it then.

I always use lighter woods for chicken.  Try some apple, cherry, almond and or pecan for a great light smoke flavor.  Doesn't mask the chicken flavor.  Me? I'll pass on the Rosemary......never liked it although it's a great garden plant

Ive tried all those except almond. Ill have to try some. I love pecan. Im a heavy smoke fan but im never opposed to a nice mild flavor if its good.

Almond is a very good wood for chicken.
