Hello everyone, We have been smoking and bbq here in SD for about 7 years now but have been cooking over fire California style for about 15 . We have learned about bbq and smoking mostly through trial and error and with the help of Youtube and the internet sites like Smokingmeat. We are starting out on the competition circuit this year and are very excited. We have done parties and corporate events so this was the next logical step for us. Beside the competition part is something I am looking forward to being an ex athlete.
We cook off of 2 slightly modified Char King Offset Smokers. Looking forward to the fun and helpful tips and recipes we will gain through this forum.
