Hi everybody, I'm doing my first pork shoulder on Saturday and I need a few pointers. First I have a 11lb shoulder bone out I'm cooking in a TLE. So my first question is, since the bone has been removed the shoulder is barely together, I have seen a few other people bind it together. Do I need to vibe it or will it cook evenly the way it is? Second is the cook time, I was thinking a hour per lb, putting me at 10hrs, do I need to let it settle for 3 hours taking the cook time to 13 hrs? I appreciate any help I can get. qview coming soon

Hello.  Without a visual of the butt I will offer my humble opinions for what they are worth.  IF the thickness is fairly even throughout and IF you are going to do pulled pork, you can get by with smoking it the way it is so long as you stick to around 225.  IF you plan to slice it I would roll and tie it.  Then you could also smoke at higher temps.  IF it MUST be done at a certain time I would allow 1 1/2 hr. per lb..  Yes, with either method I would rest it for at least 2 hr..  Hope this helps.  Keep Smokin!

Thanks Danny, so I started this morning at 6a.m. I took your advice and didn't tie it. I've been cooking around 225-245. So far so good let me know what you think. Here it is all rubbed up and ready to go. This is it at about 5 plus hours.
