Smoked Chicken Spaghetti w/ Qview

I had some leftover smoked pulled chicken from a cook I did on Saturday:  http://www.smokingmeatforums.com/t/161458/a-simple-smoked-chicken-w-qview

 

 

 

Mrs. Red has a tasty and easy recipe for chicken spaghetti, so we whipped up some with this smoky chicken

 

Very easy recipe:

 

One 12 oz. box of angel hair pasta

One 10 oz. can of Ro-tel diced tomatoes (I prefer the "Hot" version made with Habaneros, but the Original with green chilis is OK too)

About 10-12 oz. Velveeta, cubed (we used the white - Queso Blanco - but whatever your favorite is would be good)

About 16-20 oz. (just a guess) of smoked pulled chicken.

 

Cook the pasta, then combine all ingredients on low heat.  Stir until the cheese is fully melted and all ingredients combine.

 

Served with a nice fresh garden salad and some homemade lemonade:

Delicious and super easy!  Nice and spicy, with a nice smoky flavor from the chicken.

Looks great! I love doing this with smoked chicken and pulled pork. i usually cook my meat in the sauce for close to a hour

That looks great!  Is that a pretty standard marinara/spaghetti sauce you cooked that pork in?

i like to make my own but i dont really have a strict goto recipe yet...usually my method is to sauté some garlic and onion in a pan till it softens, pour in a can of generic tomato sauce then bring to a simmer, add pork and seasonings. Let it simmer for atleast 30 mins to let the smokiness leach into the sauce and all the flavors meld.

That's pretty much how I make my spaghetti sauce too, except I usually cook some Italian sausage in the pot, after the onions and garlic but before adding the tomato sauce...I gotta try it next time with some smoky pulled pork!

i've done it with smoked chicken as well and its equally as delicious! its a good way to reuse left over chicken because other methods of reheating and dry it out but cooking it in the sauce makes it moist again and delicious!
