Last year I made Kabanosy from a recipe Shannon127 and just loved them. I also made a Amish Ring Bologna from a recipe from Nepas. I liked the bold bologna and garlic flavor so I decided to try them as snack sticks. They are very good and I will be making them again. I stuffed 1- 3 lb chub in a clear summer sausage casing for sandwiches. The Kabanosy I didn't change a thing. Here are a few pictures.

Used black cherry hunks and apple pellets in the AMNPS. Put some blue to them.
Raw and dried and just hung in the smoker.
2 hours of heavy smoke.
it took almost 6 hours to finish. The temp was dropping and was -8F when I finished. Everything went in the pan in a hurry!
