We planned on cooking a 7 pounder tomorrow, but woke up this morning and thought this was a good day to fire up the smoker. Anyway, I put it on at about 9:30 and one way or the other we're eating it for dinner at somewhere around 6:00 pm.

I've got a Green Mountain pellet smoker so I can run it at any temp easily.Right now I've got it set for 270, but was thinking at some point I'm probably going to have to crank it up around 300 to make this happen. Any suggestions?

Yep. Crank it. Foil at 160° for even faster results...JJ
