National Finals and Smoked Chicken!

Its Rodeo National Final week, Last night to next Sunday! Totally awesome competition this year.

So 36 hours ago I threw a chicken into brine. This chicken was a world class diver and could hold its breath for a berry berry long time. Actually Pop's been doing Doctors this week so instead of a yesterday cooking it got postponed till today.

Brine

1/3C white sugar

1/2C Brown sugar

1/3C Canning salt

1T Tony's

1/2t Tabasco

1T Tiger Sauce

1/2t Cayenne

1 bayleaf

Cleaned, brined, set in the reefer 36 hours. Dryed placed in the reefer to dry/dehydrate and form the icky stuff!

Rubbed with garlic infused clarified butter and sprinkled with Tony's More. 1/2 Honey Crisp apple sliced thin, a really big piece of thin sliced ginger and a big bunch of parsley in the seasoned cavity.

MES30, Pecan shells, @275 for 45 mins, to dry and ensure smoke, drop to 230.

20 mins before you estimate the chicken to hit a 165 IT, add 1/2C additions Pecan shells add the sprout-a-bobs.



The Bear Shot! Whomever is in charge of plating needs to be talked to, they are giving these way really small portions!


Louisiana Yams, Smoked Brussel Sprouts, Green Pea/Macaroni Salad, Smoked Chicken and some garlic bread. As usual on the good china, its imported from Sam's. (The fresh Yams stole the show)

That's what I did this afternoon, besides the clothes/dishes/floors and chased a Rat across the yard! Neighbor was on her porch with tears in her eyes laughing.... Its funnier now.

Thanks for dropping in, Supper was saved by the yams, the chicken brined too long and the density had become springy. But excellent taste.

 If you want the Pea Salad, Yam, Garlic bread or Sprout recipes let me know. Simple but not basic.
 
Hello Foam.  Great lookin meal as usual.  You are a MACHINE my friend.  I do have to ask:  are you a rodeo fan or is it just a great reason to smoke some good eats?  Just curious.  Keep Smokin! my friend.

Sorry you didn't think the chicken was great but it looks fine from here. I have been in Vegas a couple of times for NFR. Of course, if you want real Rodeo, you have to come to Canada. The Williams Lake or Calgary Stampede.

Chicken and brussels Looks great yes NFR is great Never been there but watch it each yr. Use to collect the Hesston Belt buckles
 
C'mon guys, the original Rodeo....... Pecos Texas. Then it couldn't hold the huge venue that places like Calgary, Houston, Odessa, etc... Some of my family rodeos, some of the family boot scoots (I could shine a belt buckle in my day), but most of the family watches... LOL

Odessa is the first rodeo of the year (cousins would just move in my house for the rodeo), you couldn't park for all the trailers LOL. I am guessing Houston is the biggest (it takes 6 or 8 weeks), Pecos was the US original. So yes, I watch the National Finals. I did before it long before it was recognized as cool. What can ya say about Calgary, it has it's own rodeo whiskey! I lied, its Pendleton, not Calgary.... Doh!

Back to the food, the Louisiana Yam's need to be tried if you can find any! I know they are sweet potatoes but the Louisiana Yam has a tm'd name and do taste different. If you ever get a chance, and its a HUGE crop in central Louisiana. Damn they are good when slow roasted for about 3 or 4 hours the meat is so dark its almost red..

 Been to Calgary once, another one of those places I could have stayed. I figured it might settle down too much AFTER the rodeo left.

Mexico has a really fun and different Rodeo. These guys do things you have to have a Marine mentality to try. They are definitely cowboys in my book, the Steer Tripping (Coleadero), and the Leap of Death (El Paso de la Muerte),  take Huevos Mucho Grande!

Cheyenne is fun if you can find a motel room, sleeping in the horse trailer would no longer be acceptable. I don't care how much parting you could do on that room money! ROFLMO. I drove a trailer of roping horses up there for my cousin. The cowboys swap out horses at different rodeos because no one can move 'em that fast to make all the rodeos.

Why thank you, they were pretty good.

Rodeo. Its a lot better to watch. I never could understand why you had to be boots on the ground, saddle cinched, at 5 AM. Its still dark! Heck some of us were just getting in! LOL
 
My goodness that looks delish!! I think I'll have to try the b. sprouts on the smoker too. It looks yummy!
Thanks, if ya do the sprouts, make sure and nuke 'em in the wave for about 3.5 mins first, and don't over smoke 'em, they get dry quick. 10 to 15 mins. And try to get 'em in while you are still making smoke. I like 'em and they are a good always keep in the reefer, go to veggie.

I would comment upon the National Finals parties, but I don't believe I can and stay within the PG13 standards. I am guessing you'll trust me about it though.
I'll trust you if you believe I went to Vegas to visit the libraries and museums.

Nice looking bird you have there Foamheart.

Will be watching the rodeo also.  Before the gas prices got so high we used to go to the rodeos quite frequently.  Lazy E arena near Oklahoma City, Salt Palace in Salt Lake City, Pendleton Roundup were we enjoyed the wild horse races, Calgary Stampede were we would enjoy the chuck wagon races and that strictly martini bar downtown, Cody Nite Rodeos, NFR in Vegas were we enjoyed everything and many local rodeos. Now we are limited to a few local ones.
