Used elk and pork fat 80/20 for Version II of “Some Like It Hot”
Started with a base of AC Legg #116 and added:
Mixed up the batch last night, let it sit in the fridge overnight. Turned out about 12lbs.
Switched up the case sizes today
Drying out at 125F

- Onion Powder
- Worcestershire Powder
- Ground and Crushed Anise
- Crushed Fennel
- Dried Jalapeño
- Crushed Red Pepper
- Ground Habanero
- I did not add the Fermento
