Well I've been lurking on this Forum for most of the summer now and I figured it was about time to join. I started smoking about 13 years ago when I decided to try smoking some tuna after a really good albacore trip out of San Diego. What I've learned from reading posts In this forum is I'm lucky that no one got sick from my earlier smokes! Too low a temp for too long of a time! Well fast forward to present time and I mainly spend my smoking time on a modified GOSM propane smoker.....I took the burner out and switched over to charcoal for hot smokes, and use a 1500 watt heating element on a 2000 watt dimmer for slow smoking cured meats.I just got delivery of Todds amazen pellet smoker and this weekend will be my first time using it, really pumped to try it out.
