Hey everyone. Well today I decided to try my hand at some turkey legs and well here goes.
I peeled the skin back and seasoned the meat with my favorite poultry rub and then pulled the skin back over the seasoning.
After that, I seasoned the outside and placed them back in the fridge while I got the smoker ready and watched some football.
Once the UDS was going good @ 230°, I placed them on with just a heat deflector underneath. No water pan.

As for some of the smoke details, well, not sure on how much each leg weighed and I didn't do any brine or overnight stuff as this was kind of a last minute decision. I got the UDS up to 230°F and placed them on. The UDS held between 220° and 240° the entire cook and they took just at 3hrs with an IT of 183° when I pulled them off. I flipped them at the 1.5 hr mark. I used Stubbs hardwood briquettes with apple chunks mixed in the coals and some Jack Daniels chips wrapped in some tinfoil buried in the coals. When I pulled them off, I wrapped them in foil and heavy towels and let them rest for about 45 minutes. I didn't achieve the bite through the skin tenderness but they we still amazing.
